For The Dough
- ¼ cup olive oil
- ¼ cup sugar
- ¼ cup plain Greek yogurt
- 1 egg, beaten
- ½ teaspoon baking powder
- 1 1/3 cups all-purpose flour
- 1/8 cup brandy
FOR THE FILLING
- ¾ pounds fresh soft myzithra cheese (ricotta may be substituted)
- ½ teaspoon ground cinnamon
- 1 tablespoon sugar
- ½ egg yolk
- ½ teaspoon grated orange peel
- 1 tablespoon all-purpose flour
- 1 egg, beaten (for glaze)
In a large bowl whisk together the sugar, baking powder and flour. Add the oil, yoghurt, eggs and brandy, mixing as you go along and a dough forms. Knead the dough for approximately 10 minutes until smooth and set aside to rest.
In a separate bowl, mix together the cheese, cinnamon, sugar, egg yolk, orange peel and flour until well blended.
On a floured surface, roll out a piece of dough until about 1/8 of an inch thick, using a 3-4 inch biscuit cutter cut out circles and set aside.
Place a spoonful of the cheese mixture into the center of the dough circle and spread out close to the edges. Raise the rim of the dough up and around the cheese and pinch the edges to pull the dough in around the cheese, leaving the center open so the cheese is visible.
Repeat using all of the dough and filling. Place on a baking sheet and brush lightly with the egg. Bake at 350 degrees for approximately 20 minutes until lightly golden brown. Springly lightly with cinnamon.
