Spring Salad with Mastic and Pomegranate


  • 2 ounces baby spinach
  • 2 ounces mesclun mix
  • 1 medium tomato diced
  • ¼ cup crumbled manouri cheese
  • 3 tablespoons pomegranate seeds


  • 9 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon mastic, ground
  • Salt & pepper to taste

For Vinaigrette:

In a dressing bottle or jar with lid, add the olive oil, vinegar, mastic and salt & pepper.  Shake well and set aside.


In a large, wide serving bowl combine the spinach, mesclun mix and diced tomato.  Top with the crumbled manouri cheese and pomegranate seeds.  Drizzle with dressing and enjoy!
