Spinach & Rice (Spanakorizo)
  • 3 bunches fresh spinach
  • 1 large yellow onion diced
  • 1 can diced tomato
  • Salt
  • Pepper
  • 1 tablespoon dill (fresh or dried)
  • ¼ cup rice
  • Extra virgin olive oil

Wash and clean the spinach well.

In a large pot, sauté diced onion with olive oil until golden.  Add the diced tomato, salt, pepper, dill and cook for 2-3 minutes.  Add the spinach in batches, adding more spinach as each batch wilts.  Once all of the spinach has been added, add the rice, one cup of water and cook for approximately 25 minutes or until the rice and spinach are done and the sauce has thickened.
