Spetsofai (Greek Sausage & Peppers)
  • 3 sausages, slice ½ inch pieces
  • 5 green peppers, sliced
  • 2 yellow onions, sliced
  • 1 red pepper, sliced
  • 4-5 tomatoes (skin off, and grated)
  • 3 garlic cloves, chopped
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste

In a deep skillet on high heat, add the olive oil and cook off the sausages (approximately 4 minutes).  Remove the sausages.  In the same pan add the peppers, onions and garlic.  Sweat down the vegetables over a medium-high heat for approximately 5 minutes.  Add the tomato and sausages, mix well and simmer for approximately 30 minutes.

Serve with rice.
