Skate Salad
  • 1 Bunch curly lettuce
  • 7 Ounces of skate meat
  • 7 Kalamata olives
  • 1 Boiled Potato cut into cubes
  • 1 Green onion sliced
  • Salt & pepper to taste
  • ¼ Cup Extra virgin olive oil
  • Juice of 1 Lemon

Wash and cook skate in pot of salted boiling water.  When done, drain from water and let cool.

Wash and dry lettuce, hand cut into small pieces and place onto serving plate.   Debone skate flesh and add to lettuce.  Evenly distribute the boiled potatoes, green onion and olives over the lettuce.  Whisk together the olive oil and lemon juice, season with salt and pepper to taste and drizzle on salad
