Pork with Honey and Thyme (Tigania)
  • 1 pound pork shoulder cubed
  • Zest of 1 orange
  • Juice of 2 oranges
  • ½ cup white wine
  • Juice of 1 lemon
  • 1 Tablespoon honey
  • 2-3 Sprigs of Thyme
  • Salt & pepper
  • 3 Tablespoons of Olive Oil

Preheat a skillet on medium high heat add the olive oil and pork, season with salt and pepper and cook until golden brown on all sides.  Once browned, add the white wine and cook down for 2-3 minutes.   Next add the orange zest, orange juice, lemon juice, honey and thyme and stir well.   Adjust seasoning and continue cooking for 8-10 minutes or until sauce has thickened and pork is cooked through.
