Rinse the fish, which has been soaking overnight. Squeeze the moisture out with your hands and pat dry. Slightly salt and pepper the fish and set aside.
You will need 2 shallow bowls.
In first bowl add 1 cup of flour and season with salt and pepper.
In second bowl add 2 cups of flour, salt and pepper and add enough beer to create a medium batter.
In a deep skillet add enough olive oil for frying and bring to a medium/high heat.
Dredge the fish in the flour first, then dredge through the batter, and finish off by dredging through the flour again, shake off excess flour, add to the skillet and fry for about 5 minutes per side or until golden and the fish is flaky.
Remove from pan and drain on paper towels.
Repeat until all fish is cooked.
